1. Haggis isn't a cookbook sort of dish, even though it may
have been mentioned in a "cooking guide from 1615." The
Scots-English lady's hypothesis sounds a bit johnny-come-lately,
or perhaps johnny-on-the-spot, as it applies modern attitudes
to a not-modern phenomenon. More specifically: the notion that
an illiterate Highland housewife would have a cookbook at her elbow
when making haggis is pretty bizarre. More likely she'd have watched
her mum and her mum's mum making the stuff for a decade or so by
the time she was ready to start off on her own.

2. I used to have a copy of Apicius, as you should know.

Nah, the stuff she smokes isn't good enough. I once got
cornered into taking a couple tokes with her, and the
weed was underwhelming.

Take your favored (or least ill-favored) recipe and double the
onion. And if there's no thyme, add some.

I can see something going from magnificent to mediocre when cooked
by different hands, but off taste and texture sucking rocks is far
more extreme than even a new cook should produce.

And a prime example of why the chain restaurants survive - much
less likely to get such a surprise there.

You need filler in meatloaf. Crumbs at the least, and preferably eggs.
Otherwise it becomes something, as Nicholas would put it, the density
of a white dwarf star.
