I've been to the Aja location at 12 Corners (Brighton) a number of
times.  Where is the one you found that's closer to you?  I think I
remember one being advertised as maybe Perinton...??

Very true... not really authentic, it's Asian fusion, and that's all it
claims to be...  but it is good tasting... :)  (Unlike Wild Noodles,
which Richard and I tried, and the asian types didn't even look very
promising... we tried their beef stroganoff which was ok, but nothing to
go back for.)

I tried their Singapore rice noodle and found it dry, IIRC... that was
the first time I was there, some time ago.  What I usually get is the
Yakisoba (I think I'm spelling that right, it's from memory), a
buckwheat noodle with vegetables and your choice of protein (I usually
get the beef or the shrimp) with sesame seeds and ginger and a soy-based
sauce.  When I'm there with my friend Donna, we sometimes get an
appetizer to share.  We're usually there for lunch, so don't get soup as
well as the noodles.  It's a pretty good-sized bowl of noodles, and
makes a good meal on its own.

I haven't had anything particularly hot at Aja... I think you are right
that they don't really have anything real hot.  I generally ask for
extra ginger for my entree, but that doesn't really heat it up either,
as it's the pickled ginger that you'd get with sushi.

They also tout their feng shui atmosphere... that's supposed to help
with the relaxing I'm told... :)
