MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Tamale Pie (Low Fat&Sodium)
 Categories: Mexican, Low fat, Low sodium
      Yield: 2 Servings
 
      1 sm Can no-salt canned tomatoes,
           Undrained
      1 sm Can no-salt canned corn
      6 oz (cooked weight) ground
           Turkey
    1/2 sm Onion, chopped
    1/2    Green bell pepper, chopped
      3    Cloves garlic, minced
           No-salt chili powder**
           Cilantro,
           Cumin to taste
      2 tb Cornmeal or masa, dissolved
           In a small amount of
           Water to make a whitewash
      1 c  Cooked cornmeal mush***
 
  **( (I used a LOT of chili powder, nearly 1/4 cup in this, but your
  palate might prefer less)
  
  ***(use your favorite polenta recipe, but substitute fat and salt-free
  beef or vegetable broth for the liquid)
  
  Saute the turkey in a non-stick pan.  Drain off any fat.  Add
  tomatoes, onion, garlic and bell pepper, and simmer until the liquid
  from the tomatoes is reduced by about 1/4.  Add canned corn, and
  season to taste (season rather highly, as some of this will be cut by
  the blandness of the cornmeal.)  Thicken by adding the whitewash as
  needed to make a rather thick, but pourable mixture.
  
  Pour pie mixture into a heatproof baking dish, and top with cornmeal
  mush.  Brush the top of the mush lightly with low-fat, low sodium
  margarine, and bake in a preheated 350 degree oven until the top is
  lightly browned.
  
  If you wanted to be REALLY good, I'm thinking this would still be
  pretty edible if you substituted either TVP or cooked lentils for the
  ground meat.
