I've encountered everything from the strangely hostile (who are
convinced I'm older than I am and must be a militant OAP) to the
substantially friendly to the overfamiliar (one guy in San Francisco
grabbed my hips and performed a simulated carnal act on my buttocks,
which I thought a bit much: I avoided that particular checkpoint for
a while but returned to it when he was no longer in evidence). I
prefer mildly hostile to mildly friendly, myself.

The Indian bureaucracy is at least as famous as Indian food but
is uniformly unpleasant, whereas the latter ranges from vegetarian
to delicious.

AVIYAL

serves: 4

1 plantano, peeled*
1 lg zuchini
1 lg cucumber, peeled, deseeded
3/4 lb green beans, string 'em first
2 lg carrots, peeled OR
1/2 lb butternut squash
1 cn chenai (optional, from Indian store: drain, wash, and cut into sticks)
1 cn murungakkai (optional, from Indian store: drain, wash)
1 c water
turmeric
salt
4 green chiles, chopped
1 c yogurt
6 oz coconut milk OR
1/2 c fresh coconut
curry leaves (opt)

*look in the strange vegetable collection/section,
or substitute 2 v v green chiquita bananas

**From here on you are on your own. Throw in any other veggies
you like at your own peril.

Chop veggies 1 1/2" long and and less than 1/2" thick. Wash them
separately.

Steam cook veggies on low-medium simmer using a large pot with
a lid, with about a cup of water. Layer washed hard veggies on
bottom to softest veggie on top. That is, plantain on bottom,
next carrot, beans, squash, zuchini on top. If you are using
the canned chenai and murungakkai add it when other veggies
are 3/4 done, they come sorta pre-cooked in cans. Add turmeric
and salt while veggies are steaming - takes 30-45 min.

You have two options in this improvised stage.

Option 1. Blend 4 green chillies with half a can
of coconut milk (Thai product, avail. Indian store)
(Not _cream_ of coconut which also comes in cans.)
Add a cup of yogurt and blend everything into
cooked veggie and simmer few minutes, without
letting it boil. Throw in few curry leaves, if
you have them. This produces a thin but very
tasty aviyal and can be eaten with rice and appaLam.

Option 2. Carve out half a cup of fresh coconut in
slices from a fresh coconut. Blend this with 4
green chilies plus a cup of yogurt. Add all of this
to cooked veggie and simmer a few minutes, without
letting it boil. Thow in curry leaves if you have
them. This produces a thick aviyal which can be
either a side or main dish.
