That's the heat, killing the yeast I'd guess.  Just like when you use water
that is too hot to dissolve it.

That obviously helps, but I think that is more to keep the dough moist.  I
think that it's the extemely low power that microwave is capable of that also
helps it work... it's not 10% of the power like another microwave we have, it's
1% :) That's why I bought this one years ago, another one I'd had also allowed
1% power and that's when I'd first used one to proof bread.  You can feel the
warmth that 1% causes when you use it on fish as well, or when you use 1% to
defrost frozen foods (no hot water used then).

===Basil, Garlic and Potato Bake===
Serves 6
2 tablespoons fresh basil, chopped
2 tablespoons olive oil
1/2 teaspoon pepper
6 garlic cloves, slivered
1 14-ounce can chicken broth
2 pounds potatoes
Combine oil, pepper and garlic.  Add the broth and potatoes.  Toss to mix well
and coat potatoes.  Place in a 13x9x2 baking dish. Bake at 325F for 1 hour and
15 minutes, or until potatoes are tender.
