Ärende: Chicken and Pancakes

These recipes are tried and true.  I made the pancakes last week and froze the
leftovers.  This is cheaper than buying eggo waffles

Maple Curry Chicken

none

2 tablespoons olive oil
2 tablespoons butter
1 large onion, chopped
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
2 cups cubed cooked chicken breast meat
3 cloves garlic
1 teaspoon sugar
1/4 cup pure maple syrup
1 cup heavy cream
2 1/2 tablespoons hot curry paste

Heat butter and oil in a large skillet over medium heat. Add onion and
peppers, and cook until onions are soft and translucent. Stir in cooked
chicken and garlic, and sprinkle with sugar. Cook, stirring for about 3
minutes, then stir in maple syrup, and cook for about 5 more minutes, until
caramelized.
Stir in curry paste and heavy cream, and reduce heat to low. Simmer
uncovered for 10 to 15 minutes, or until the sauce reaches your desired
thickness.

Oatmeal Apple Pancake

breads

1 1/4 cup milk
1 cup plain yogurt
3/4 cup quick cooking oats
1 each egg
2 tbsp unsalted butter; melted
1 1/4 cups flour
1/4 cup sugar
2 tsp Baking Powder
1/2 tsp baking soda
1/2 tsp Salt
1/2 tsp Cinnamon
1 each McIntosh Apple; peeled, cored, and diced
  oil for greasing pan

Preheat oven to 250. Mix milk and yogurt together. Soak oats in 3/4 cup of
milk mixture for 10 minutes. Add egg, and butter to remaining milk and
yogurt mixture and set aside. Combine flour, sugar, baking powder, baking
soda, salt, and cinnamon together in a bowl. Add reserved milk mixture,
oatmeal mixture, and apples. Stir just until flour disappears. Heat non
stick griddle over medium low heat and brush pan lightly with oil. Scoop
batter into 1/3 cup sized portions onto pan. Cook until bubbles appear on
top of pancake and bottom is golden. Flip and cook other side until cooked
through until golden about 2 to 3 minutes per side. Keep cooked pancake on
sheet in low oven while cooking remaining batter.
