  I'll be straight with you people: I buy stock. I'm lazy, just like
  you, and I'm not feeling bad about it because I don't spend nearly as
  much money on Bolivian Marching Powder (BMP) these days.
  
  However, it doesn't have to be this way. Huh?
  
  Right. Making stock has been sold to us by various TV food
  celebrities as a dedicated act of culinary religiosity. Something
  that takes hours of preparation and boiling. The truly bad part about
  this is that it is totally not true. Uh?
  
  History people. This is what screwed us.
  
  Historically stock was made on a daily basis by scullery maids that
  spent all day cooking. They took all of the waste products from their
  enterprises and tossed them in a pot with some water and let it go
  all day on the stove. The mental image of a mountain of celery,
  onions and roasted goose bones simmering from sun up to sun down it
  daunting to say the least.
  
  Luckily the same history that doomed us to thinking of stock making as
  fool's maneuver also left us some clues to how we lowly, urban,
  lazy-asses can live without buying the store-bought stuff that smells
  like chicken farts.
  
  The problem is that we were so focused on the mountain of ingredients
  that we forgot the whole point of stock: making something nutritious
  and delicious out of cast off food odds and ends.
  
  The truth is that you don't have to have 20 lbs of carrots and four
  roasted squirrel carcasses to make a fine stock for most purposes,
  all you need is some onion ends and the left over bones from your
  pork chops or whatever.
  
  It's So Easy...Easy
  
  I almost feel like not writing this it's so simple.
  
  Say you made some pasta sauce or stir-fry or whatever passes for
  cooking at your place, you have some left over shit. Onion ends,
  potato peels, garlic husks, herbs stems, anything!
  
  Now just throw it in a small sauce pan with some water and boil the
  hell out of it while you're making whatever it is that you make when
  you're not ordering pad thai.
  
  That's it.
  
  After about 30 minutes just turn it off to let it cool and then pour
  it through a strainer into a plastic Chinese take-out soup container
  or an old mayonnaise jar.
  
  The big thing that you have to get over is that you're only going to
  end up with a cup of stock, which is fine since it freezes forever
  and you don't use it very often anyhow. Remember that when you
  combine your batches in a soup or rice or whatever, the flavor should
  be better than the individual parts because of the different flavors
  in all of your little mini-stocks. So you get quality and convenience.
  
  This recipe will come in handy later in the week when we unveil the
  first act in the new GG video recipe series that will leave you with
  a denuded chicken body and several deep cuts on your hands.
