Beans are always a minor enough ingredient that you could
leave them out.

What I do to render them palatable: quick saute in butter,
splash of sherry, splash of meat stock. This is pretty much
my standard way of making anything icky edible, though
Brussels sprouts require a slow saute in butter, preferably
with more butter added partway through the cooking.

That's a bit much, but you have some assurance that the wood
doesn't have any horrid adulterant.

1. You can use any wood that you'd consider smoking with, but
cedar is traditional for the supposedly good flavor it imparts.

2. Very careful.

Planked shad fillet with vegetables
servings: 2 or 3
cat: New England, fish, main

1 plank
1 lb shad fillet
olive oil
vegetables to taste such as
parboiled fingerling potatoes
blanched fiddleheads
cherry tomatoes
thin asparagus
scallions in 2" sections
1 lemon
s, p

To make your own plank: use a board of oak or cedar about
9x16x1.5". Plane it smooth, giving one side a shallow
indentation to hold food. Leave unfinished.

Oven at 400F.

Smear the top of the plank with oilve oil. Lay the shad
fillet skin side down in the middle.

Lightly coat vegetables in olive oil.

Drizzle more oil over the surface of the fish.

Squeeze the juice of a lemon over all and season.

Put the board on a middle or higher rack of the oven,
close the door, and bake 15-20 min, depending on the
thickness of the fish. Serve directly from the plank.
