Ontario is *much* more thinly populated than the Great American Outback. Deer
are more of a nuisance here than wild turkeys. Foxes and coyotes (and feral
mutts) are becoming an increasing problem, too. To the point that some farm
families who have a "free range" chicken operation are either modifying that
operation or getting out altogether. On guy who raises dairy goats near
Congerville, IL lost a couple of his herd to coyotes ... so, he bought a
Russian Wolfhound and spent some time bonding it with the goats. End of problem
... except for the feed bill for the pooch. Wolfhounds are big and eat a LOT.

We have a couple commercial places who will process venison for food banks.
Both are USDA inspected. Both offer the hunters a deal. We don't charge you for
the processing - but, 50% of your meat goes to charity (food bank, breadline,
soup kitchen, etc.). Works well for all. And the winos eat pretty well for a
while.

      Title: Venison: The Basque Way
 Categories: Game, Pork, Vegetables
      Yield: 4 servings
 
      3 lb Venison roast
        cl Garlic; several, as needed
           Salt & pepper
      1 lg Onion; sliced
      1 lg Green pepper; sliced
      4 oz Can whole pimento
      3 sl Bacon
 
  With sharp-pointed knife, pierce meat several times and
  insert slices of garlic. Season with salt and pepper.

  Smother roast with onion, green pepper, pimento, and bacon.
  Add small amount of water, cover and bake in slow oven,
  basting occasionally. Drippings make excellent gravy.
