That's always neat... I remember when our kids were younger trying to figure
out what they'd want beforehand.. most times it wasn't too difficult.. of
course now that their older, it's easier to figure the grand-boys gifts than
our own kids Lol..

Hehe.. sometimes true.. then you have kids like my daughter, who was nursed for
for over a year, then suddenly when she was 2 1/2 had her food allergies go
crazy... to all foods. Had to start everything all over after only giving her
only 'soy formula' and lollypops for about a month... Allergist told us it is
all in the genes in her case. My brother was the same way.. Peaches burn his
mouth to this day.. but thank goodness she is not allergic to any metals like
my mom is.

Some people like my mom are allergic to gold too.. very strange, though. But
our family is full of allergies from both sides :(

Yeah, I had to wait a few years or something from what I remember. Maybe it
was just a year.. Can't remember now :)

That sounds really nice :) I bet those hoops from Singapore are pretty :)

Yep, same here :) This year for my daughter's birthday we purchased some
concert tickets for her as a surprise so she could go with her friends.. she
was thrilled :)

It's somewhat similar.. I found this recipe in one of the cookbooks I bought in
Lousiville.. It was interesting because the girl who wrote the cookbook was
originally from Sullivan County NY, which is where Ron grew up ... never saw
that cookbook all the years I lived in NY, but it was pretty popular in
Louisville (g):
Hummingbird Cake:
================
1 cup (110 grams) pecans, toasted and finely chopped 3 cups (420 grams)
all-purpose flour 2 cups (400 grams) granulated white sugar 1 teaspoon baking
soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3 large eggs, lightly beaten
3/4 cup (180 ml) safflower or canola oil 1 1/2 teaspoons pure vanilla extract 1
- 8 ounce (227 grams) can crushed pineapple, do not drain 2 cups mashed ripe
bananas (3-4 medium sized bananas)
Pecan Cream Cheese Frosting:
===========================
1/4 cup (57 grams) unsalted butter, room temperature 8 ounces (227 grams) cream
cheese, room temperature 1 pound box (454 grams) (about 3 2/3 cups)
confectioners (powdered or icing) sugar, sifted
1 teaspoon (4 grams) pure vanilla extract 1/2 cup (55 grams) finely chopped
pecans Garnish: (Optional)
pecan halves
Preheat oven to 350 degrees F (180 degrees C) and place the rack in the center
of the oven. Butter or spray two - 9 x 2 inch (23 x 5 cm) round cake pans and
line the bottoms of the pans with a circle of parchment paper (sometimes I use
3 9" pans).
Place the pecans on a baking sheet and bake in the oven for about 8 minutes or
until lightly browned and fragrant. Let cool and then chop finely. Set aside.
In a large bowl whisk together the flour, sugar, baking soda, salt, and ground
cinnamon. Set aside.
In another large bowl, mix together the eggs, oil, vanilla extract, pineapple,
mashed bananas, and finely chopped pecans. Add the wet ingredients to the flour
mixture and stir until combined. Evenly divide the batter between the prepared
pans and bake for about 25 to 30 minutes or until a toothpick inserted in the
center of the cake comes out clean. Remove from oven and let cool on a wire
rack. After about 10 minutes invert the cakes onto the wire rack, remove the
pans and parchment paper, and then cool completely before frosting.
Frosting:
========
n the bowl of your electric mixer (or with a hand mixer), beat the butter and
cream cheese, on low speed, until very smooth with no lumps. Gradually add the
sifted powdered sugar and beat, on low speed, until fully incorporated and
smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla
extract and then stir in the finely chopped pecans.
To assemble: place one cake, top side down, onto your serving platter. Spread
with about a third of the frosting. Gently place the other cake layer, top of
cake facing up, onto the frosting, and spread the rest of the frosting over the
top and sides of the cake. Can garnish with pecan halves. Refrigerate the cake
for about one hour so the frosting has time to set. Serves 10 - 12 people. Yes,
it's a big cake :)

Aw.. poor guy.. So sorry to hear that! Hope he does ok. Priscilla is
suffering from that a _lot_ right now.. mentioned it in cats_meow, not sure if
you noticed.. we found a vet here that will come to the house and I'm so happy.
I really don't like giving her these arthritis pain pills without more
checkups at the vet, but we haven't been able to get her in the SUV :( At 14
years old (that's something like 98 in human years or something), it's no
wonder she can barely get up and move.

You can ask your vet if he thinks joint-enhancer will help.. I give that to
Priscilla with her pain pill.. it is supposed to help them grow more cartilege,
etc. She's only been on that one for about a week so it's too early to tell if
it's really helping, but it seems so (with glucosimine, chondroitin and MSM) .
The pain killer the "old" vet has her on is Deramexx and that is one nasty
pill.. you have to watch for internal bleeding and punctured stomaches.. not my
idea of a great med for a dog :( So I give her a ham&cheese or Turkey&Cheese
sandwich with the pills... but I'm hoping the new vet on Monday will have some
better ideas for her. He's supposed to be here at 10am on Monday.

Great idea your vet had.. and sure, cat's get arthritis too from what I
understand..

hehe :) We have always had one for Priscilla near our bed.. but her arthritis
is so bad at her age, that she doesn't even try that jump anymore. That's ok..
Toby already hogs the bed enough Lol So we concentrate on making sure she has
a nice warm rug nearby to lay on all the time :)
