Good going.  I did the chocolate chip cookies this morning.  Last night
I had the oven going for several things all done at the same time--a
meat loaf, a couple of good sized butternut squash, a couple of sweet
potatoes, tossed a frozen Irish (had been baked earlier, this was to
reheat) potato half in part way thru and something Steve got from the
Food Network site (recipe to follow).  Ended up just having that, some
meat loaf and splitting a squash half.  Tossed stuff into the fridge and
repackaged for the freezer & fridge for next day or so eating when we
got home from church.

Seems they're grown all over the place; my parents have a good crop
every year.

ROASTED CARROTS AND PARSNIPS WITH THYME

1 pound carrots
1 pound parsnips
3 tablespoons extra virgin olive oil
2 tablespoons honey
coarse salt & freshly ground pepper
6 springs fresh thyme (or couple or so tablespoons of dried)

Preheat oven to 350F.  Peel carrots & parsnips, cut in half lengthwise,
quarter larger ones.  Place on large rimmed baking sheet. (I used a 13x9
glass pan, lightly spritzed with non stick spray.  Drizzle vegetables
with olive oil & honey, sprinkle with salt & pepper, toss to coat.
Scatter thyme sprigs on top (or mix in, using dried).  Place in
preheated oven, stir after 10 minutes.  Continue baking for 10 more
minutes, until vegetables are tender and slightly caramelised.  Serve
warm, serves 4.

My notes:  I baked it a total of half an hour since I had other things
in the oven.  Next time I do this, I may try it with fresh rosemary
instead of the thyme.  Servings are generous, makes about 6, with other
side dishes.  Good one to do when oven is going for other things.
