That is the key to all the variations unless you plan to call it jam
and serve it on breakfast toast (also tasty BTW).

And many other things. They are a delight. Roslind and I try to pick
a gallon or two every fall, after the first frost but before heavy
snow buries them. We'll dry half of them and freeze the balance.

There is a small patch in the corner of my back yard that yields a
cup or two. My g'kids usually take care of that harvest. But there
are lots of good patches within a few miles of the city, less
than 20 minutes away by car.

     Title: Spiced Cranberry Sangria

  Servings: 6

           FOR THE FRUIT:
      2 c  fresh cranberries
      2    Granny Smith apples; large
           dice
      1 c  Spiced Simple Syrup Recipe
    3/4 c  Cointreau
    1/2 c  ruby port wine
           FOR THE SANGRIA:
      1    bottle Tempranillo rose
    1/2 c  ruby port wine
    1/2 c  Cointreau
    1/2 c  cranberry juice

For the fruit: Combine all ingredients in a 3-quart container with a
tight fitting lid. Cover and refrigerate at least four hours or
preferably overnight.

For the sangria: Add all ingredients to the fruit mixture and stir
to combine. Refrigerate until chilled, and serve over ice.

Description: "Warm spices and tart cranberries make this sangria
ideal for a winter holiday celebration."

Adapted from Jose Garces from Amada Restaurant.
Yield: "2 1/2 quarts"

NOTES: Chef Jose Garces serves this with an apple chip garnish for
a more elegant finish, but even without it it's delightful.

  Servings: 44

      2 c  water
      2 c  granulated sugar
      3    cinnamon sticks; (3-inch)
      8    allspice berries
      6    cloves
      3    whole star anise pods

Combine all ingredients in a medium saucepan over high heat and
bring to a boil, stirring occasionally.

Remove from heat and let cool until lukewarm. Strain syrup through a
fine mesh strainer into a heatproof airtight container and discard
spices.

Cover and store in the refrigerator until ready to use.

Description: "Infused with warm spices, this simple syrup adds
wintry cheer to anything it tops. Try it on citrus fruits for a
winter fruit salad or in Spiced Cranberry Sangria by Chef Jose
Garces.
