I have no choice if I want to visit her. Her ranch is 500 miles south
of me and 500 miles north of the Edmonton airport.

Imagine driving from Bingingham, New York to Savannah, Georgia.
There are no villages or farms, just forest until you get as far
south as Norfolk. The ranch is at the very end of a side road around
Richmond and the nearest gas station and grocery store to Richmond
is back in Norfolk. That's the kind of distances and remoteness I am
talking about.

     Title: A Burst Of Camembert And Cranberries On Baby Greens

           CAMEMBERT TRIANGLES:
      2    wheel (9 oz) camembert;
           chilled
      4    sheets phyllo dough
      1    stick butter; melted
           THE SALAD:
     10 c  assorted baby greens, washed
           & dried
      1 bn green onions, sliced very
           thinly
      1 c  balsamic vinegar
      1    recipe cranberry
           vinaigrette
      1 c  toasted pecans
           CRANBERRY VINAIGRETTE:
      2 T  spicy brown mustard
      1 T  minced onion
      1 t  minced garlic
    1/4 t  salt
    1/2 t  freshly ground black pepper
    3/4 c  sherry vinegar
    3/4 c  sweetened cranberry juice
    2/3 c  canola oil

The cheese triangles may be assembled a day or two prior, brown just
before serving.

Line a baking sheet w/parchment paper. Cut the wheel of camembert
into 6 triangles each.  On a cutting board, lay out one sheet of
phyllo dough and brush it with melted butter (keep remaining phyllo
covered with a damp tea towel). Place another sheet of phyllo on top
of first and brush with butter, reserving 4 TB of butter.

Using a sharp knife, cut buttered phyllo sheets into 6 strips, about
2-1/2" wide. Place a triangle of camembert on one end of each phyllo
strip. Fold one corner of the dough over to cover the cheese and
form a triangle. Continue folding dough, like a flag, maintaining
triangular shape. Place triangles, seam side down, on baking sheet
and refrigerate until ready to serve. In a large skillet just before
serving, heat 4T of remaining melted butter over medium-low heat.
Add cheese-phyllo triangles and cook 30-45 seconds on each side
until just golden brown. Using tongs remove the cheese triangles and
drain on paper towels.

Cranberry Vinaigrette: Makes about 2 cups

In a small heavy-bottomed saucepan, reduce balsamic vinegar by half
and set aside. Whisk all the vinaigrette ingredients together in a
glass or stainless steel bowl. Transfer to jar with tight-fitting
lid. Store in refrigerator and shake well before serving.

Place greens in large bowl. Just before serving, lightly dress with
the cranberry vinaigrette.  Place a small mound of dressed greens in
center of each plate.  Set a warm cheese triangle on  top of each
salad. Drizzle reduced balsamic vinegar around and over the greens
and garnish with pecans. Serve immediately. Pass remaining
vinaigrette.

The cranberry vinaigrette is mine and I'm a sauce addict so I say
pass any remaining.... there may be other addicts. Terry, you could
use your 50 year old balsamic and not reduce it.  :)
