Possibly she wasn't kidding. If your taxi ride in Singapore
costs, say, S23.45, and you give the driver S25, you are likely
to get S2 back. And may well not accept a "keep the change" or
the equalizer of a S1 coin.

Indian Lamb Chops with Curried Cauliflower
cat: Indian, lamb, main
servings: 2

2 c small cauliflower florets
2 4- to 5-oz lamb shoulder blade chops
2 ts curry powder, divided
1 Tb vegetable oil
1 ts all purpose flour
1/4 c low-salt chicken broth
1/4 c whipping cream
2 Tb mango chutney
2 lg green onions, chopped, divided

Steam cauliflower until crisp-tender, about 4 min. Transfer
to bowl; sprinkle with salt and pepper.

Sprinkle lamb with salt, pepper, and 3/4 ts curry powder.
Heat oil in medium skillet over medium-high heat. Saute lamb
to desired doneness, 4 to 5 min per side for medium-rare.
Transfer to plates. Pour off oil from skillet.

Add 1 1/4 ts curry powder and flour to skillet; whisk 15 sec.
Add broth, cream, and chutney. Boil until thick, whisking,
2 min. Add cauliflower and half of green onions; toss to
heat through.

Spoon curried cauliflower over lamb. Sprinkle with
remaining green onions.
