Pay attention, now. There will be a quiz on this later. Bv)=

I do know something about this - mostly because the structure/design/style of
the bridge at Lake Havasu City, AZ is a dead ringer (except for span) for the
Vachel Lindsay Bridge spanning two shores of my local (Lake Springfield)
man-made body of water.

The bridge, as erected at Lake Havasu City is a simulacrum of the original that
spanned the Thames.

The Arizona bridge is a reinforced concrete structure clad in the original
masonry of the 1830s bridge, which was bought by Robert P. McCulloch from the
City of London. McCulloch had exterior granite blocks from the original bridge
numbered and transported to America, in order to construct the present bridge
in Lake Havasu City, a planned community he established in 1964 on the shore of
Lake Havasu. The bridge was completed in 1971 along with a canal, and links an
island in the lake with the main part of Lake Havasu City.

It remains a popular rumour that the bridge was bought in the belief that it
was London's more recognizable Tower Bridge, but this was ardently denied by
McCulloch himself and by Ivan Luckin, who sold the bridge.

Title: Bridge Creek Fresh Ginger Muffins
 Categories: Breads, Snacks, Citrus
      Yield: 16 servings

      2 oz Ginger-root; fresh, unpeeled
    3/4 c Sugar
           +=PLUS=+
      3 tb Sugar
2 tb Lemon zest; (from 2 lemons
           - with some white pith)
      8 tb Butter; room temp
      2 lg Eggs
      1 c Buttermilk
      2 c All-purpose flour
    1/2 ts Salt
    3/4 ts Baking soda

Preheat oven to 375øF. Grease muffin tins.

Cut unpeeled ginger into large chunks. Process in food
processor until ginger is in tiny pieces. (You should
have 1/4 cup. Better to have too much than too little.)

Put ginger and 1/4 cup sugar in small skillet and cook
over medium heat until sugar has melted and the mixture
is hot. This only takes a couple of minutes, don't leave
  unattended.

Remove ginger mixture from stove and allow to cool. Put
lemon zest and 3 tablespoons sugar in food processor and
process until the lemon peel is in small bits; or chop
the lemon zest and pith by hand and then add the sugar.

Add the lemon mixture to the ginger. Stir and set aside.

Put the butter in a mixing bowl and beat a second or two,
add the remaining 1/2 cup sugar, and beat until smooth.
Add the eggs and beat well. Add the buttermilk and mix
until blended. Add the flour, salt and baking soda. Beat
until smooth. Add the ginger-lemon mixture and mix well.

Spoon the batter into the muffin tins so that each cup is
  three-quarters full.

  Bake 15 to 20 minutes.

  Serve warm.
