Ärende: CHEESY BARSTIDS 00304
=============================
-=> Quoting Dave Drum to Glen Jamieson <=-

ML> Here is the list of allowed cheeses, and I quote without
ML> comment: "cottage cheese, cream cheese, American cheese,
 ML> Velveeta and synthetic cheese."

GJ> I would guess that "American" would be intended to mean
GJ> "Philadelphia". The word "and", above, is superfluous.

DD> And you would be extremely wrong. While American cheese is usually
DD> denigrated as the worst possible variety of anything resembling cheese.
DD> It is loved by children (and adults) all over America as a snack or in
DD> grilled cheese sandwiches, American "process" cheese is not usually
DD> considered "cheese," except by the sketchiest of legal definitions.

My presumption of "American" as equivalent to "Philadelphia" was based
solely on the styles of cheese which were allowed. As the given list
could have been a foreign one, the maker of the list could have given
"American" as an alternative name. Of course there is no "American"
cheese sold here.

 DD> FROM: www.wisegeek.com

DD> "American cheese in its most common form is a blend of milk, milk fats
DD> and solids, with other fats and something called whey protein
 DD> concentrates. All the
DD> ingredients must meet the legal definition of cheese, even if the
DD> final result is more cheese-like. This is why many American cheese
DD> products bear the title "cheese product" or "cheese food" on the
 DD> packaging.

How different is that from "Velveeta", "cheese product", or "sandwich
slices"?

DD> American cheese used to be a blend of Colby and cheddar cheeses. These
DD> varieties were most popular in America, and it was invented in
DD> America, hence the name. American cheese then was sold in blocks in
 DD> delis and supermarkets. It
DD> was preferred because of its milder flavor than cheddar."

DD> This is my preferred form of "American" cheese - basically a mild
DD> cheddar. Back to the quotes --

But apparently no longer made. Or is it?

DD> "With the surge in popularity of convenience foods in the 1950s, it is
DD> not surprising that processed cheese slices were first commercially
DD> available in 1950. This processed cheese soon took the name "American"
DD> and American cheese as we know it was born. "American cheese" does have
DD> a specific definition as a pasteurized process cheese, in fact.

DD> However, it needs to be pointed out - which the wisegeeks do not do -
DD> that "cheese product" and "cheese food" are not interchangeable with
DD> "American Process Cheese" or "American Cheese".

Between you and wisegeek, my head hurts!

DD> "American cheese was first popular because it melted smoothly and
DD> didn't separate when heated, as cheddar tends to do. It was great on
DD> grilled cheese sandwiches, on cheeseburgers and for use in dips and
DD> spreads. It still maintains those properties, and most people are
DD> familiar with Ro*tel cheese dip.

DD> American cheese has its critics, for its fat and sodium content,
DD> colorings and other additives. It is, after all, made from the remnants
DD> of "real" cheese-making. However, it is high in calcium and protein,
DD> and is still a good way for parents to make sure their picky eaters get
DD> some kind of variety in their diets. Although disrespected by many,
DD> American cheese still has a place in American eating and cooking."

DD> PHILADELPHIA (brand) Cream Cheese: (also called soft cheese) is a
DD> sweet, soft, mild-tasting, white cheese, defined by the US Department
DD> of Agriculture as containing at least 33% milkfat (as marketed) with a
DD> moisture content of not more than 55%, and a pH range of 4.4 to 4.9.
 DD> (source USDA)
DD> Cream cheese is not naturally matured and is meant to be consumed

As sold here, cream cheese is often made into a dip, with flavourings
such as chili, smoked salmon and herbs and garlic.

DD> Philadelphia is used by some as a generic term for cream cheese, and

As done in Australia.

DD> "Philadelphia Cream Cheese" is a trademarked and copyrighted brand
 DD> owned by Kraft Foods.

Kraft owns most of the cheese makers here, also.

On this day in 1493, Chris Columbus arrived back in Lisbon, to tell
everyone he had been to the East Indies.
