There are store brand slices sold as "Tasty Natural Cheese",
manufactured from pasteurised milk, salt, enzymes, etc.  No "American"
or "Australian" as a type name.  Area names are given to designate
different Italian types of cheeses, although they are all made in
Australia - by Kraft.  There used to be an excellent cheese, made in
the south of the state by Mil Lel, but then Kraft bought the factory,
the quality deteriorated, and as far as I know the factory is now just
used for other Kraft products.  The best cheap cheese is "Mainland",
imported from New Zealand.

I thought a cheese had to be made by the action on milk of an enzyme -
rennet derived from calf stomachs, or a chemical equivalent.

After reading a list like that, I can well understand why some people
in country areas want to make their own cheeses!  (Even if, like one
cheese maker here, they call it, "Udder Delights".)

All kinds of flavourings get added to cheeses, to the marketroids
delight.  Yoghurts are even more "got at".

An interesting form of social welfare.  Possibly practiced for similar
reasons to the "card" system of pensions used in some of the small
aboriginal communities in the NT, whereby the womenfolk can get food
for the kids from the store, instead of the menfolk getting the money
and spending it all on booze.
