Ärende: Refreshing old food

I had the misfortune lately to buy: some oranges that had gone mealy
and were badly dehydrated, a similarly stressed pineapple (I should
have known better when they were $6.99 one week, marked down to
$1.99 the next) and a severely under-ripe cantaloupe. None of them
were particularly edible. So I chopped them all up and macerated them
in a liter of orange juice in an attempt to rescue them. After two
days the orange juice had picked up a bitter off taste, so I added a
spoonful of sugar and waited two more days. Eureka! I had some
juicy, greatly enhanced mixed fruit for a fruit salad and an
interesting tasting orange juice cocktail. The mix is now 8 days old
and improving daily.

I also had some old, withered parsley, scallions, celery and
asparagus. They ended up in a flower vase half full of water covered
in a plastic bag like a little greenhouse. They sure absorbed a lot
of water by capillary action and were completely refreshed in two
days, with their life extended perhaps another week.

The real challenge was what to do with the incredibly overly salty
Jiggs' Dinner where I forgot to pre-soak the salt beef overnight,
which I reported on here earlier. Well, each single potato
successfully seasoned either a potful of mashed potatoes or a
chowder, the carrot and turnip went into a large batch of otherwise
unsalted butternut squash puree, the pot juices did wonders, in
small batches, for a pot of rice, another of lima beans and a third
of split pea soup. The meat itself was combined with some moose
bones (a twelve inch section of backbone from Ray's recent hunt) and
yielded 2 gallons of perfectly salted stock which is being converted
into various small batches off soup daily. I could have thrown the
whole thing out (it would have been easier) but I enjoyed the
challenge of converting waste into good food.

Considering most people would have thrown out all that stuff I can
say I ate well for a week for free.
