Ärende: Catching up...AGAIN! :) [1]
====================================================================
Hi Janis,

>> made a pot of sauce and meatballs and Rigatoni for lunch. I was lucky
>> enough to find a 5 1/2 lb. Leg of lamb at the health food store so we
>> had for dinner with roasted potatoes and Italian spinach. Now my
>> daughter still isn't eating meat - she requested clam sauce and
>> linguine haha.. so I made that while the roast still had about 45

JK> > Sounds good. We'd just gotten in from our trip the night before so
JK> > didn't really have anything suitable non frozen. We went out with
JK> some > friends from church to a local (Southern style food) cafeteria.

JK> That sounds really nice :) Good company and good food :) I hope your
JK> trip back home went well.

All went smooth; the GPS directed us on some back roads in PA we'd never
been on before. We've noticed that it very often will take us a
different way on the return trip than the one to the destination. In
this case, it wasn't different for most of the trip but we were on some
real rural roads after crossing into PA at Hancock.

 JK> > Just
JK> > before we went to NY, Kroger had leg of lamb on sale so we got one
JK> and > popped it into the freezer. Now that we're back, I've got to
JK> decide how > I'm going to fix it.

JK> I stuffed mine with garlic slivers and parsely.. had to forego the
JK> usually included italian cheese because of Eoin's dairy allergies, but
JK> it was great. After I stuffed it I covered it with garlic salt, pepper
 JK> and thyme.

 JK> ===Leg of Lamb Roast===

Somewhere I've got that, from when you posted it while we were in GA.
We tried it and liked it then; have to find it and consider doing it
with this roast.

>> give us a buzz - you don't have to wait til June (g). Whatever works

JK> > We're back in NC. Classes started again yesterday. We left my
 JK> parents

 JK> Had a feeling :)

HAd to be back for Steve's Monday morning class. We'd not been to our
church in several weeks so we wanted to be there for Easter also.

JK> We > stopped in Hancock & got 4 quarts of maple syrup, some maple
JK> candy, maple > cream, some ginger cookies and granola bars. We also

That sounds great :) I used to love stopping for such when
we'd go up JK> to Vermont.

What, you don't buy NY State maple syrup? Heresy! But, I did have a
Vermont maple hard candy recently--not seen those in NY.

JK> > but spent the night in Martinsburg, WVA. That got us back home by
 JK> about > 5 pm.

 JK> Sounds like a good trip :)

All in all, very good. Did some cooking for my dad--stuff he'd not had
in years (tapioca, rice pudding) and got mom's pantry turntable & spices
cleaned out & sorted. Plus a bunch of meals for them in the freezer.

>> the kids left, the dogs were flopped on the floor exhausted :)

JK> > No surprise there. The dogs don't have the stamina right now as
JK> they're > so young. Give them a few more months and they will keep
JK> right up with > Drew and the others.

JK> Lol that is true.. right now they are bundles of energy, and are still
JK> taking several naps throughout the day. When they're awake, they are
JK> 1- buggy Toby to play, eating the rug off the floor in the mudroom
JK> (argh!) or this week at least, playing with the grandboys :)

IOW, typical puppies. (G)

>> pretty wasted but I attribute that to the changing temperatures..
>> (freezing one night, then suddenly the switch to 80's).

JK> > But you don't have the heavy pine pollen we deal with down here. Our
 JK> car

JK> No, we have a different type.. LOTS of goldenrod and ragweed, though
JK> it's early for it right now. Main bad season for it is in summer and
JK> fall though Spring is bad sometimes (g).

Yes, my brothers used to suffer thru the ragweed. They got an AC in
their bedroom; we had a fan. I don't know how I'd react to ragweed, etc
now but don't want to try it.

JK> > is supposed to be a (very) light sage green but it, like just about
JK> all > the other cars in the area, is a not so nice yellow green from
JK> the pine > pollen. I stay inside as much as possible.

JK> That does sound very bad :( I can understand your not going out!

It's not worth the risk to my health. We're supposed to get a heavy
rain tonight, knocking down some of it.

JK> > Saves tearing up the ground if you're renting a place like we are.
JK> We > still get the garden.

JK> Yes, and normally one has at least a few garbage pails to use.. you do
JK> have to pierce them for drainage though. Don't forget that garden
JK> centers such as those at Loews, etc. will have very large planters you
JK> can also use.. better in some ways since they already are going to
 JK> drain well.

Probably so. We'll consider over the next few weeks what to put in and
what method. The rosemary over wintered well and is back, big time!
