I used to think that cilantro was, as described, soap-weed. Couldn't stand the
stuff. I don't know whether my taster has changed, or I have grown more
tolerant, or just what is going on. But, some dishes just don't taste "right"
(mostly Mexican stuff) without some cilantro.

Like you, I tend to use a light hand with it so as not to overpower the dish.
Unlike you, I don't care for coriander seed. I generally substitute celery seed
(or leave it out altogether) where coriander is called for in a recipe.

      Title: Celery Seed Bread
 Categories: Five, Breads, Herbs
      Yield: 4 servings
 
      6 tb Butter; softened
    1/2 ts Celery seed
    1/4 ts Paprika
    1/4 ts Parsley flakes; dried
      4    Hot dog rolls; sliced
 
  In a mixing bowl, combine butter, celery seed paprika and
  parsley flakes, stirring well to blend. Spread on cut sides
  of each roll. Place on baking sheet; broil until golden
  brown.
