See what I did earlier in this packet. I did end up deleting
the ones to whatever 193 became.

Tung doong dong = winter and also I think North.
Hsi shee shi = summer and also I think South.
Tung shi = stuff, as in miscellaneous junk.
Don't quote me on any of this, as I discover that my linguistic
ability, such as it was, has really gone "hsi" in the recent past.

I used to save almond, pecan, and hazelnut shells for my Cameron
smoker. And I've heard of peanut hulls being used for the purpose
- these have a nice porous texture so should smolder nicely, but
I don't know what sort of flavor they add.

Here's a recipe from a famous pizza joint, now I understand
defunct but possibly according to some reports reopened, that
we went to on one of The Dinner Table outings -

SMOKED TOMATO AND JALAPENO SALSA
cat: appetizer
yield: 1 qt

5 Ripe Tomatoes
1 bn Cilantro
3 Jalapenoes
1 Bermuda Onion
1 Red Pepper, Chopped
1 Green Pepper, Chopped
1 Yellow Pepper, Chopped
5 Garlic Cloves, Peeled and Cracked
2 Tb Tomato Paste
1/2 c Olive Oil
1/4 c Sugar
1 ts Cumin
2 Limes, juice of
2 Tb Balsamic Vinegar
Salt and Pepper

Core and halve tomatoes and place in a smoker. Cold smoke for 45 min.
In a food processor, blend tomatoes with jalapenoes, cilantro, tomato
paste, sugar, cumin, lime juice, and balsamic vinegar. In a pan over
low heat, heat olive oil and cracked garlic cloves until cloves are
gently browned. Strain out garlic and pour hot garlic oil into tomato
mixture. Remove from food processor and pour into mixing bowl. Stir
the chopped peppers and onion into the salsa, and season to taste
with salt and pepper. Serve with any Southwest style food.
