Hi Janis,

The last few message from you to me in the last packet didn't make it.
Steve has been trying to upgrade my computer; I hit a wrong key and
something went out of sync. It meant I would have had to search the
whole data base for them and since there was nothing earth shattering, I
let them go. He had me using a full size lap top while working with my
system and my fingers hadn't re-adjusted to this keyboard. (G)

JK> > I never had formal piano lessons; my parents bought a cut down piano
JK> > when I was in high school. A friend taught me some basics but I

JK> When I was a kid, my parents hired a music teacher for my two oldest
JK> sisters.. He taught them to play violin. I hung around while they
JK> were being taught so one day he taught me a few things about the
JK> piano. It was fun - I could play 3 blind mice after that (vbg).

And how much more after the next time?

 JK> sisters
JK> > picked it up naturally (She also had several years of music
 JK> lessons--on > the clarinet--that I didn't.) and then took piano
JK> lessons as an adult > when her first son started them. I don't think
 JK> second son had them.

JK> Yes, it's fun to take lessons and play piano as an adult. My dad
JK> played by ear so it's in the family here as well. I can play a song
JK> if I've heard it as well, perhaps not on the concerto level though
JK> (bg). I got both my kids piano lessons when they were small and they

Rachel had some piano lessons in exchange for baby sitting the teacher's
kids when she was in high school. OTOH, Deborah wanted (and got) riding
lessons. We paid for some, then she got a job at Taco Bell to pay for
more.

JK> both did so well. It was great to hear them play. My son was the
JK> better player, playing with more feeling.. My daughter was more
JK> 'technically perfect', though, and still a good player. She blew us

My sister played "technically perfect" too--no feeling in it at all.
She's a civil engineer and pretty much tries to keep her life
"technically perfect" as well.

JK> away when she was about 8 or 10, and wrote a song that the piano
JK> teacher transcribed for her - that was incredible to me (g). After a

Quite an acomplishment! Is she still into music in some form?

JK> while, I hired their music teacher to teach me piano and that was so
 JK> great.

I never went much further with instrumental music but have joined choirs
in our various churches. Not that strong a voice but good "filler' type.
(G)

 JK> > It's a Nutramill--sounds like a jet airplane when it's in use. (G)
JK> Got > some barley out of the freezer today to grind, as well as some
JK> > wheat berries for pastry flour.

JK> Ok, this one does the same, one just must re-grind it a few times. I
JK> think I had the setting a bit two wide earlier. That would make sense
JK> for the kernel not being so well ground.

Quite possible. We use ours mostly for flour. Steve has adjusted the
grind a bit from time to time but within a relatively narrow band.

>> 5lb containers or quart size, etc? I have a lot of quart size from
>> the chinese restaurant (g)

JK> > I use a large square cannister I bought from Tupperware some years
JK> checked--large one > is 17 cups, smaller is 11 cups. Much larger than
JK> a quart. (G) I know > the larger one holds more than 5lbs but not
JK> sure how much more. I've > also got buckwheat flour, gluten, baking
JK> mix and white sauce mix in the > fridge. Small quantities of rice and

JK> Heh - I have a huge can of gluten I ordered from the people who sell
JK> us our wheat kernels. If I don't have bread flour, I'll use that of
JK> course. I'm still cutting home ground the whole wheat with some of
 JK> that on occaision.

I don't use the gluten too much in the KA mixed bread, more so when I
use the bread machine recipies. Some of my grains and such like I keep
in Snap Wear type containers--they have lids with a rubber gasket and
fold down flaps that snap into tabs on the sides of the container
itself. They do a pretty good job of keeping things air/moisture tight.
I found the first ones in a drug store in HI but now they're all over
the mainland.

JK> I made white sauce today for a recipe we love to have with
 JK> leftover-chicken. It's a hot chicken salad, really yummy:

 JK> ==White sauce:==

 JK> ===Hot Chicken Salad===

JK> Mix well, and heat in 350F oven for about 10-15 minutes. Serve on
 JK> freshly toasted bread.

Chopped mushrooms, sauteed in the butter or oil used in the white sauce
would be good in this too.

>> I love tofu but that's one of the things Ron is not crazy about, so I
>> don't use it often. Sometimes I use in miso soup though :)

JK> > We go on fits and spurts with it.

JK> It's handy to have around I think. And it does absorb flavors really
JK> well... much like gluten meat (wheat-meat) does. I also love that,
JK> and Ron isn't crazy about it (bg).

We go meatless but use complimentary protiens instead of trying to make
a mock meat.

JK> > the commercial white or unbleached; when I have to use them at my
JK> mom's, > I just don't have the "feel" that I'm used to from working
 JK> with whole > wheat. (G)

JK> I keep it around for those moments when I'm just too tired overall (g)

I just can't get used to the feel of the unbleached or white flour for
kneading.

JK> > Yes, even my parent's dog has accidents from time to time. They
