Last time we made it, we used cubanella, anaheim and poblano.   We liked
the flavor, but would have liked a little more heat.  Since we finished
the last serving from the freezer tonight, we'll be making it again
soon.  This time I'm going to forget the cubanella, use anaheim and
poblano and toss in one of the hotter long green chiles --after tasting
it to figure out how much.

I remembered that you did not like jalapenos.  How about chipotles?  I'm
thinking about smoking some jalapenos some day soon.  Haven't looked up
how to do it yet, but will.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Roger's Crawfish
 Categories: Crawfish, Cajun
      Yield: 4 servings
 
      1    Stick butter
      8 oz Fresh mushrooms, each cut in
           -half
      1 c  Green onion, chopped
      3    Cloves garlic, peeled and
           -minced
    1/2    Stick butter
    3/4 lb Crawfish
    1/4 lb White crabmeat, picked
      1 tb Crawfish fat dissolved in
      2 tb Water OR (see--NOTE:)
      3    Sprigs parsley, chopped
      2 ds Tabasco sauce
      2 ds Worcestershire sauce
    1/4 ts Basil
    1/4 ts Thyme
    1/4 ts White pepper
    1/4 ts Black pepper
    1/2 ts Oregano
           -salt (to taste)
           -red pepper (to taste)
      1    Jigger brandy
           -angel hair pasta, cooked
           -plates, preheated to 250
           -degrees F.
 
  In a pot, heat the 1 stick of butter.  Saute the halved
  mushrooms, green onions, and garlic.  Saute for 10 minutes.  Add
  the 1/2 stick of butter, crawfish, crabmeat, and the crawfish fat
  dissolved in the water or crawfish bag rinse water(see--NOTE:).
  Simmer for 5 minutes.
  
  Add the parsley, Tabasco sauce, Worcestershire sauce, basil,
  thyme, white pepper, black pepper, oregano, and the salt and red
  pepper, to taste.  Simmer for 5 minutes longer.  Add the brandy
  and simmer 3 minutes more.
  
  Serve over angel hair pasta on the preheated plates.
  
  NOTE:  Rinse the bag the crawfish meat came in with 3 tablespoons
  of water.
