Ärende: A dinner party.. but you have to work first! :)(3) [1]
====================================================================
Hi Janis,

>> Yes, he is quiet :) took him a while to get used to all the hubbub at
>> my parents home :) But pumpkin bread is favorite cake of all time..

JK> > Steve can be quiet, unassuming, etc until you get him going on
JK> > something. Then he'll get rather emphatic with his opinions. (G)

JK> Sounds like his Italian heritage coming through? (G) But I can

That, and his sense of what's right and/or wrong.

JK> understand someone feeling strongly about some things though. Ron
JK> will do the same sometimes. I tease him and tell him it's his Dutch
 JK> hard-headness coming to the front :)

I do it quieter for the most part. For example, I use all white paper
napkins, towels, etc instead of colors or white with prints. Keeps the
dyes out of the ecosystem. I'd use unbleached if I cold get them
easier; we did get paper towels like that in the Berlin commissary. One
of our girls commented on the "whole wheat" paper towels. Anyway, Steve
usually comments on my German hard headedness (he usually uses the word
stubborn) from time to time. I can be very firm.

JK> > I get slammed all over. It's supposed to be hot again over the next
JK> few > days but I've got to finish getting my groceries tomorrow.

JK> That's a drag.. :( When it gets that bad out, I send Ron alone to do
JK> the shopping. He's good at it when I need him to go out alone for me.

It was quick trips into the air conditioned stores. We were only at
Lowe's for about 20 minutes because we had perishables in the car.

JK> > stay in, make some pickled beets with the beets we got today at

Got them done today, with some modifications to the recipe I gave you.
Used 4.5 pounds of beets, cooked in pressure cooker, cooled, skinned &
cut into slices. Made up a double batch of the pickle mix, packed beets
into 5 pint jars & added brine, poking out air bubbles. Pressure canned
at 10 pounds for 30 minutes. Extra brine will go for pickled eggs with
onions tomorrow.

JK> Whole > Foods Market. I'll pick up some tomatoes tomorrow at Lowe's
JK> and start > cooking them down for salsa. I'm doing that differently
JK> the differece with > fresh. Hopefully it'll help the salsa retain
 JK> some chunkiness at the

JK> I plunk the tomatoes in boiling water for about 2 minutes to get the
JK> skins off, and then process the jars in either a hot water bath or
JK> pressure cooker (preferred way for me is the pressure cooker). Are

Same here, as I learned from my mom and taught, not only our girls but
some friends along the way.

JK> you using regular tomatoes, or Roma type tomatoes? That can make a
JK> difference. You probably already know that the Roma tomatoes have
JK> less watery content and less seeds. If you are adding fresh tomatoes
JK> to the processed tomatoes, I think that would make it more watery, but
JK> I guess time will tell. It would though increase the chunkiness since
JK> those fresh tomatoes wouldn't have been cooked for as long. I usually
JK> do that with Romas I still have unprocessed.

Romas, of course. I've used them exclusively for salsa making for the
past 17 (or so) years. I've also used them for chili sauce &, if I had
enough, for canning spaghetti sauce. It's the only tomato we plant.

JK> > Definately! We enjoyed the cones. The shop is on our route home
 JK> from > church.

JK> That's great - A nice stop on the way home :) Of course, now I want
JK> Ice Cream :) Sometimes I think I should only read this echo after a
 JK> meal.

You'd still be hungry, maybe not drooling on the keyboard as much tho.
(G)

>> Sure :) Whatever works best for a person. Do you have to peel it
>> when you cook it in the pressure cooker?

JK> > I cut it up into big chunks, cook it and when it's done the peel
JK> just > peels (G) away. Easiest way to peel & cook a pumpkin that I

JK> Yes, same with baking it.. except I cut the pumpkin in half only. The
JK> pumpkin half on the baking sheet forms a seal so the pumpkin roasts.
JK> Since I use Pie Pumpkins, you can fit the two halves on one cookie
JK> sheet generally. When it comes out, you just lift the skin off in
JK> one piece. Some of the roasted juices are around the base of the
JK> pumpkin so you can scoop that up as well. The _big_ difference I see
JK> though is outside of doing it in my microwave, the oven is a heat
JK> source that one might not want in Summer.. though normally I don't
JK> notice that since it's done in September/October when things have
JK> started cooling down. I do use my pressure cooker to cook dry beans
JK> like garbanzo, canellini, and such, and to can tomatoes, etc.

Most places I've lived it's still been hot in September into early/mid
October. (G) And, most of the time I've used jack o lantern (thanks to
having kids) pumpkins. The girls would draw a face on with a marker so
I had a whole, uncut pumpkin to use.

>> If I haven't worn them into the ground (g)

JK> > That's the other possibility. Some of the ones you get, you wonder
JK> how > you ever lived for so long without them. (G)

JK> Lol, that is so true :) I recently read an interesting article about
JK> dishwashers and what type of gadgets, etc. were safe to stick in a
JK> dishwasher .. I'd stopped putting my 'vintage' Blue Willow coffee mugs
JK> in the dishwasher a while ago, because it seemed like they were
 JK> somehow getting less

Not a good idea. The detergent fades them in time too.

JK> microwave-save.. made no sense. I'd already pretty much stopped
JK> putting knives in the dishwasher because I'd tired of having to
JK> sharpen them... The article I read stated that dishwashers are

I only put in the 3 inexpensive ones (with plastic handles) I got in
Switzerland. All others, except table knives, are hand washed/dried.

JK> (ones that I've had since maybe the 90's). I think my older
JK> dishwasher that is still on the other end of the kitchen had a gentle
JK> cycle that might have worked better than this newer dishwasher in the

I know, mine doesn't have one either.

>> ceilings are low, that won't be much help at all :(

JK> > The ceiling is high enough but wall space is at a premium. The
JK> kitchen > is also our dining room, laundry area and has our chest
 JK> freezer in it.

JK> I think it sounds pretty well full up then :)

Very much so! (G)

>> Probably not a national chain.. I forget the name of the one in
>> Lousiville.

JK> > Too long ago probably. Sometimes I'll remember something from a
JK> place > where we lived longer ago than a more recent one.
