I've had boiled-down juices as sweetener, and they're fine
for what they are. I think one could probably use thawed
frozen juice concentrate for the same purposes.

Hey ... question here. So if fructose (as in fruit sugar)
is okay for you, why is high-fructose corn syrup not okay?

Can't think of anything ... my mind is off catching rabbits
(such as the Welsh - but that's going in the other direction,
with "rarebit" being the misreading; on the other hand rabbit
with leeks in ale sauce would be interesting, wouldn't it).

I'm not fond of them, but then I didn't grow up eating
pancakes, either. I find a strong fenugreeky taste in some
of these syrups, and it's not that I don't like fenugreek,
but it seems so out of place in this setting (sort of like
raspberries or vanilla in a savory main dish).

Perhaps so. I will, however, pose the contradicente point
that various formulations of gin differ widely in the amount
and types of botanicals used, including the proportion of
juniper (myself, I prefer a more citrusy and less ginny gin).

Welsh Rabbit with Canadian Bacon and Scallion
cat: brunch, snack, cheese
sevings: 1 to 2

1 1/2 c coarsely grated extra-sharp Cheddar
2 Tb beer or medium-dry Sherry
1 ts Worcestershire sauce, or to taste
1/2 ts dry mustard
1 pn cayenne
2 sl Canadian bacon 
1/2 ts unsalted butter
1 English muffin, halved, toasted, and lightly buttered
1 1/2 Tb chopped scallion

Turn on the broiler.

In a bowl, toss together the cheese, the beer, the Worcestershire,
the mustard, the cayenne, and salt and pepper.

In a small skillet, saute the bacon in the butter over moderately
high heat until the edges are crisp.

Arrange the muffins in a gratin dish just large enough to hold them.
Top each half with a slice of bacon, half the cheese mixture, and
half of the chopped scallion. Run the dish under the broiler for
3 to 4 min, or until the cheese is melted and lightly browned.

Ham may be substituted for the Canadian bacon, which, if you're
following the recipe, makes the use of steak knives advisable.
