I can certainly understand that.  :)  Traveling can be a pain,
especially long distances for short visits.  My own family's Christmas
often has had extra people invited, just as you've done... the waifs and
strays, so to speak... :)  One year it was our new pastor and family...
it was their first year in the States, having come to us from the Isle
of Wight... and both he and his wife were from Scotland originally, and
all their family was there.  We only had one child of our own, so we had
our special celebration for just the three of us on Jan 6, the Feast of
the Kings.  That way, the kid didn't feel as though he was just part of
a crowd... :)  That went by the wayside once he grew up and left home,
though.

My own parents used to get a good sized bird... but there were 8 kids of
us, and often some extra guests as well, so we didn't have much left
over after the original meal.  Maybe 1 or 2 meals, maybe 3 if you count
sandwiches.  One side would be completely demolished, and the other
would have had decent inroads already made of it.  :)

re:brown rice

Maybe I'll give it a try while the kid and his cooker are still here at
the house with us... :)

Sometimes I use broth..  or some of each.  I also sometimes use the
packets that come with ramen noodles, especially the Oriental ones. 
They're a bit on the salty side, too, but if I'm making up a big enough
batch it just adds flavour.  :)  If I'm using the leftover rice for
congee, I'll add broth instead of water for the basic soup.
