The higher quality cuts are "higher" 
quality for a reason (grin). Chuck is
great for slow long cooking, and 
bottom round is superb for the same.

Amanda says "HI" back, we're at Commencement
Bay Coffee waiting for a call for the first
bit shoot of the Convention (pre convention
actually at this point).  Yesterday we did a 
test shoot of available light in the concert
hall (I'll have to take you there sometime)
and Amanda got a tour of the magnificent
pipe organ (concert for same will be
Wednesday night) by the Organ Meister
for PLU. I was 17 feet high on a ladder seeing
how much of the concert hall I could get
in the frame for the cover shot of the
Luthier's magazine...LOVE the new 
camera!
Took Anne and Amanda off to the
Sushi place (Blue Island) that's 
next to 99 Bottles (the beer
shop) for dinner last night
and we all stuffed ourselves on 
fairly inexpensive sushi. Have 
no idea what dinner will be
tonight....maybe those steaks
we cut that are in the freezer!
