I consider myself to be very lucky-I was given a second chance to have a dad.

See, I have a father and a dad, but they're two different people.  My father
is someone who I could care less about and if he dropped dead today, it
wouldn't even register with me.

But my stepfather, who to me is my dad and who is in my eyes my paternal
figure, is the man who raised me from the age of eight and whom I love dearly
and respect.  He's the one who taught me how to work on a car and how to fix a
kitchen sink, if you will.

It's sad to hear both you and Michael talk about your fathers.  But what's
done is done and at least both of you became better men for it.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      7    Phyllo dough sheets; thawed
  1 1/2 tb Canola oil
      1 tb Butter; melted
  7 1/2 ts Granulated sugar

MMMMM------------------------PASTRY CREAM-----------------------------
    1/2 c  Granulated sugar
      2 tb Flour; all-purpose
      1 tb Cornstarch
    1/8 ts Salt
  1 1/2 c  Milk; 1%
      1    Egg
    1/4 ts Almond extract
    1/4 ts Vanilla extract
      1 tb Butter
      1 cn Mandarin oranges; 11oz
           .  drained
      1 c  Canned pineapple; drained,
           .  diced
      2 tb Confectioners' sugar

  Preheat the oven to 375øF. Coat a cookie sheet with nonstick cooking
  spray.

  Place the phyllo dough on a clean surface. Cover with wax paper, then
  with a damp towel when not in use.

  Place a sheet of wax paper on the work surface. In a bowl mix the oil
  and butter. Lift 1 sheet of phyllo onto the wax paper. Brush with the
  butter-oil mixture, sprinkle with 1 1/4 tsp of sugar. Repeat with the
  remaining phyllo, stacking one sheet on top of the other. Do not
  sprinkle the top layer with sugar. Place the stack on the prepared
  baking sheet. Using a sharp knife, cut the stack in thirds
  lengthwise. Cut each third crosswise into 10 (1 3/4-inch wide) strips
  to make 30 rectangles.

  Bake for about 8 minutes or until puffy and beginning to color. With a

  metal spatula immediately loosen the rectangles from the baking sheet;

  transfer to a wire rack to cool.

  For the Pastry Cream: In a small saucepan, combine the flour, sugar,
  cornstarch and salt. Whisk in the milk. Place over medium heat and
  cook for about 4 to 6 minutes, stirring until the mixture comes to a
  boil and thickens. In a small bowl, beat the egg. Whisk in about 1/2
  cup of the hot milk mixture. Stir the egg mixture into the milk
  mixture in the saucepan. Return the pan to medium-low heat and stir
  constantly for 1 minute or until the mixture just begins to simmer.
  Remove from the heat. Stir in the extracts and butter until melted.
  Press wax paper directly onto the surface. Let cool.

  Place oranges and pineapple on paper towels to drain well. Reserve 6
  segments for garnish. Spoon pastry cream into plastic food-storage
  bag and snip off a 1/2-inch of one corner. Pipe 2 lines of pastry
  cream down the center of 10 phyllo rectangles. Arrange half the fruit
  on top of the pastry cream. Top with 10 more phyllo rectangles.
  Repeat with the cream and fruit and top with the remaining 10
  rectangles. With a fine-mesh sieve, dust the tops with the
  confectioners' sugar.

  Makes 10 servings.

  Nutritional analysis: per serving: 173 calories, 6g fat, 3g protein,
  27g carbohydrates, 29mg choesterol, 107mg sodium, 31% of calories from
