When it's been out too long, yes it gets rather less nice... ;)  I think
part of the trick is to cook it just a little short of optimum so that
it has a little time to sit.  There may be other tricks to the cooking
itself, too...

There was a Chinese buffet we went to (sadly, long gone, now...) where
the food on it was routinely better than one would get at most sit-down
served restaurants.  Only when we went at practically closing time did
we ever get anything there that reminded us of "normal" buffet offerings
that had sat a little while.

Or, likely, have some foods that family members who didn't think they
wanted to eat Asian, but were being dragged along, would think looked
familiar enough to eat...   The places we've liked have also had a few
of those items on their buffet... done with a distinctly Asian flair,
which does/did redeem them somewhat...  :)  

There's one buffet here in town that we USED to go to... it changed
management, and the stuff on the buffet went from reasonably good to
passable to barely passable (and with more non-Asian offerings and
non-Asian touches to the Asian dishes) to "I wonder if they even have an
Asian cook!" nasty.  Needless to say, we don't go there any more.  On
top of it all, they raised their prices... insult to injury... ;/
