I can't buy that, at least not in its entirety.

I'll concede that _some_ cell phone _users_ are a nuisance.

The only people I know who carry two of them are on call and require
a work issued one, like nurses and firemen. That phone gets passed
around to whoever is off duty but on call. It goes with the
position, not the person. When Ray had a supervisory position at
Diavik he and others like him always carried one at all times when
not working on site. It was seldom used except for true emergencies.

There's another case for having a second phone... frequent
international travellers. Different countries operate on different
frequencies and protocols and a single cell phone won't work
everywhere. I know consulting geologists and engineers who work
outside of Canada frequently and have a different phone in each
country.

That's an old complaint common to every generation. Socrates and
Shakespeare both made similar comments in their day.

Why not? It's convenient, cheap and fast.

As it becomes illegal to do so in more and more jurisdictions, the
practise will decrease as fines are handed out and compliance will
improve over time just like seat belt usage.

I can't imagine doing business without one. I am ten times as
efficient as I used to be. If I am five minutes late for an
appointment I can call my client enroute. If he's not there when I
arrive I can call him. If he wants to see a second home on the spur
of the moment I can reach the other agent immediately and he can
call the home owner for an appointment wherever he is. I use about
600 minutes a month.

The other two breakthroughs in my industry is the internet for
advertizing and before email the fax machine for sending information
and obtaining signatures on contracts.

In the old days I had to wait until Tuesday to advertize a property
in the Friday paper, drive across town for signatures or to deliver
papers and use expensive express post or couriers for out of town
customers.

Transactions that use to take weeks now take minutes.

           Suanla chaoshou

Suanla chaoshou is a dish of Szechuan cuisine that consists of a
spicy sauce over steamed, meat-filled dumplings. Suanla means "hot
and sour," and chaoshou is what these particular large wontons are
called in the Chinese province of Sichuan.

Chao shou translates literally as "folded hands"; in Sichuan dialect
this refers to a style of dumpling whose square wrapper is folded
into two points, one crossed over the other. According to Peter
Hessler (Beijing correspondent for The New Yorker and former Peace
Corps teacher), "In most parts of Sichuan, you can walk into a
restaurant and order chaoshou without making a sound. Cross your
arms and they will understand exactly what you want."
One native
speaker claims the Sichuan-only name for these dumplings may have
originated at one time by a dialectic transposition, i.e. "chao
shou" was originally "shou chao", meaning "hand-folded".

Mary Chung's restaurant in Cambridge, Massachusetts serves a dish
called Suan La Chow Show, which are dumplings in a spicy soy ginger
sauce on top of a bed of raw mung bean sprouts. This popular dish is
different from the suan la chao shou described by Fuchsia Dunlop,
who studied at the Sichuan Institute of Higher Cuisine in Chengdu.
Although somewhat similar, Dunlop's recipe includes a substantial
amount of black vinegar in the sauce, making it much more sour.

Variations on this dish are available in many Chinese restaurants in
the United States, with the name on the English menu being "Won Ton
with Spicy Sauce" or similar.

  Servings: 1

     15    Wontons 
      1    Scallion (chopped)
           SAUCE:
   1/16 ts Garlic powder
      1 TB Soy sauce
      2 ts Rice vinegar
   1/16 ts Salt
  1 1/2 ts Hot pepper flakes in oil 

Mix the inredients in the sauce. Place a bed of bean sprouts in the
bottom of a bowl. Add 15-20 wontons. Pour the sauce over the
wontons. Sprinkle with the chopped scallions.
