I acknowledge that the last few flights I have taken, I have used a
driver's licence or passport as an ID, but doesn't anyone these days
use an old-fashioned, paper air ticket, of the sort where you keep the
carbon copy, and the top ticket is torn out and kept at the check-in?

Sounds like a waste of perfectly good goat cheese!  I am currently
working my way through a delicious 1 kg container of yoghurt.

This is why I would like to know what principles the airport metal
detectors use.  If purely the detection of ferro-magnetic materials,
the design would be relatively simple, but for other metals, it would
be more difficult, as eddy currents would have to be induced in the
objects tested.

It depends on the Fe-Cr-Ni composition of the stainless steel.  A
fully austenitic alloy is non-magnetic and very corrosion-resistant,
but most cutlery is somewhat magnetic.

My friend from Vienna with the artificial hip said that every time he
goes through the security check he gets dragged off for a full search.
With 50,000 Australians/year getting metal hip joints, the security
people should be used to them by now.

      Title: [BFT] Duke Of Atholl's Braised Haunch Of Venison
 Categories: British, Game
      Yield: 8 Servings
 
      2    Onions, chopped
      2    Carrots, sliced
      4    Sticks Celery, chopped
      2    Bay leaves
           Sprig Fresh thyme
           Handful Fresh parsley
        pn Ground mace
      4    Cloves, crushed
        pn Cayenne pepper
           Salt and freshly ground
           Black pepper
1 13/16 kg Haunch of venison (4 lb)
    900 ml Stock (1 1/2 pints)
    150 ml Red wine ( 1/4 pint)
 
  Venison was often served in the dining room of Blair Castle, home of
  the 10th Duke of Atholl, as deer roamed extensively in the hills
  surrounding the estate. This is one favourite method of preparation.
  
  Place all the vegetables in a large, deep flameproof casserole dish.
  Add the herbs, spices and seasonings.
  
  Place the venison on the bed of vegetables and pour on the stock.
  
  Bring to the boil, simmer and transfer to a moderate oven at 180 C /
  350 F / Gas 4 for 3 hours or until the meat is tender.
  
  Remove the meat, skim off any fat and add the wine.
  
  Reduce this cooking liquid rapidly, adjust the seasoning and serve
  with the venison.
