An irritation no doubt. Is there no domestic agency to
which you can offer your services: you could perhaps be
flown to Coober Pedy or somesuch place to have your expertise
taken advantage of.

That would pay for a fair amount of beer at local prices. I think
I must have had my first Bintang in January '06 and have avoided
it ever since (too sweet) except for during one misguided trip
to the Indonesian islands with friends from Singapore making the
journey just for cheap alcohol. Funny going to a Muslim country
for cheap alcohol.

Speaking of which, I discover that the President's Club, which
used to serve Dos Equis amber on tap for free, now serves the
somewhat odious and Budweiser-like Dos Equis lager. Luckily, it's
still free and will provide me the equivalent of a horizontal
break this night.

Cured Ham Croquettes
Category: Tapas
Yield: 20 to 24 thumb-size croquettes

40 g butter
40 g flour
375 ml milk
200 g chopped cured ham
2 beaten eggs
Dry breadcrumbs for coating

Another classic, which can be made up in advance and
frozen until you want to fry them. The bechamel should
be made ahead of time (the day before if you like).

Make up the bechamel, which should be thick, and leave
to cool in a tray or dish. Roll small spoonfuls into
thumb-shaped croquettes, dip in beaten egg then
breadcrumbs and fry in plenty of hot oil.
