Yes, so I will be having to adapt there as well. Never had anything
other than a round crock pot before. However, this will be good for more
cuts of meat.

My "junior" is maybe 2 quarts, quart and a half--I forget which but it's
a good one for a meal for just the 2 of us. Sometimes we even have left
overs from that.

Mine definately get filled full, more like 7/8 sometimes. Even 15/16
full which is really full, but then things cook down.

I usually cook the beans; my original pot instructions said to do so.
It's also good if I'm not planning on starting the pot at about 5 am for
a 9 pm meal--they will get tender that way but I don't want those hours.
Precooking the beans a bit ensures they will be soft.

We've seen, but not tried ox tail. They were (are) big in HI but are
they that meaty?  The part that swishes the flies has never been that
appealing but I guess it's a matter of perspective. I used to eat tongue
when my folks got it as a cheap meat when I was a kid. I guess I'll see
what Steve thinks about giving ox tail a try and we'll go from there.
I'd probably use tomato sauce instead of soup, unless I used one of the
organic soups we've grabbed more of the last few years. Campbelll's
(regular) soups are no longer on my shelves.

And I imagine you have a time keeping the critters away, with such a
