The four crewmen came spilling out the back door of the Blue Nook Cafe, one
with his napkin still tucked into his collar as a bid, and set out at a high
gallop after the departing teakettle. They and the switcher ran out of steam
about half a mile down the track. Nothing hurt except the crew's feelings.

      Title: Double Boiler Creamy Potatoes
 Categories: Potatoes, Herbs, Dairy
      Yield: 3 servings

      4 md Potatoes
      1 sm Onion
    1/2 ts Salt
        pn nutmeg
           +=OR=+
    1/2    Lemon; zest only
    1/8 ts Pepper
      2 tb Butter
      2 tb Sour cream
 
  Pare and quarter the potatoes, cover with boiling water, add
  the onion, salt and pepper. Boil 15 minutes over direct
  heat. Drain well, add the butter, sour cream and nutmeg or
  lemon rind. Place on top of boiling water and simmer 40
  minutes. Serve.

  NOTES : In the spring top with fresh dill; in the winter try
  dried crushed mint. Either way, or without herbs, it is
  good. This is another of Dollys creations.

  UDD Note: A double boiler, also known as a bain Marie, is a
  stove top apparatus used to cook delicate sauces such as
  beurre blanc, to melt chocolate without burning or seizing,
  or cook any other thick liquid or porridge that would
  normally burn if not stirred constantly. It consists of an
  upper vessel containing the substance to be cooked that is
  situated above a lower pot of water. When brought to a boil,
  the steam produced in the lower pot transfers heat to the
  upper pot.
