Orange honey: I like to save and dry lemon and orange peels after
scraping off the white pith. They are great in tea and useful in
other dishes as well, like some Chinese beef braises. Recently I had
an abundance of them so I ground a few orange, tangerine and
mandarin dried peels into a powder in a spice grinder. As an
experiment I added a heaping tablespoon of the orange dust to a
quarter cup of honey and microwaved it to boiling a couple of times.
Upon cooling I tasted it, hoping to have made something similar to
Florida orange blossom honey. It tasted more like runny marmalade!
It wasn't a total failure though as it ended up nicely flavouring
some ice tea. I will probably do it again.

Univer Red Gold paprika paste: a new food discovery... Hungarian
paprika paste in a tube! It's a puree of skinless, seedless, fresh
paprika pepper flesh. The flavour is outstanding. Better than any
pickled pimento or roasted red pepper I have ever come across or
made. At $4 for 6 ounces it isn't cheap but it's worth every penny
and going to be a regular pantry staple from now on. So far I have
smeared it on grilled haddock to good effect and made a most
excellent potato paprikash.

Perfect lamb gravy: we had a roast shoulder of lamb recently with
lots of leftovers. The meat was mild and tasty but the pan drippings
very muttony. Despite its shortcomings I made some good stock and
gravy from it. How? By adding beef to it to dilute it and mellow it
out. I scraped up the fond and deglazed the pan with water, poured
it all off into a jar and let it cool so the fat and liquid would
separate. The stock was equal parts de-fatted lamb broth and beef
stock, heavily seasoned with black pepper, mustard powder and
rosemary. For the gravy I made a roux of equal parts lamb fat and
beef tallow rendered from ground beef, cooked previously for a
lasagna and added some of the mixed stock. We had it over Yorkshire
pudding with the hot roast and the next day I made a hash of lamb,
potatoes, onion and mushrooms moistened with the leftover gravy.

The lasagna: Roslind usually makes a huge tray of it and serves it
as a main course at a family dinner. But now there are only two of
us, so we divided it into four batches in bread loaf pans. I thought
each loaf would be four helpings, two meals. But I was wrong, the
first pan was two huge helpings, one meal. Of course I went into a
lasagna coma for eights hours after that. The remaining three pans
have been wrapped and frozen for future overindulgences.

Which daddy?: Lexi managed to embarrass her mom recently. They have
been going to Lyle's church regularly since Raine started dating
him. 9They are living together now.) Last Sunday Lyle didn't attend
and the minister asked about his health and well-being after the
service. He asked Lexi if her dad was sick and the little brat
responded, "Which one? The old one Mom divorced or the new one she
hasn't married yet?"

(Lyle has been promoted to "Dad" and Chuck demoted to "My father").
