I escaped to a 70s climate, but they've been having near-record
heat here as well. So no more nonsense - got a cheap ticket to
Helsinki, and I hope I can put a Finnish to this constant
near-heatstroke. Not kidding. Then my friends Annie and Billy
are asking me to show up for six weeks solid, as Annie took a
fall and finds stuff like cooking difficult. It's been a hard
month for Annies.

I was sort of thinking the same.

Seitan burgers
cat: not burger, sandwich, main, starter, vegan
servings: 3 to 9

16 oz seitan, drained, rinsed
1/4 c chopped onion
1 ts Cajun spice blend
1/2 ts salt
1 Tb olive oil
1/2 c refried beans
1/4 c breadcrumbs
1 Tb Dijon mustard

Combine all and mix thoroughly. Saute in nonstick
skillet until brown. Let cool;' then puree in a
blender. Form into patties (3-4 for sandwiches,
8-9 for sliders); cook on griddle over medium
heat 3-4 min on a side. Serve with your choice
of rolls and condiments.
