Though I admit I had a pretty good experience in
Belgium last time, remember that the Belgians are
responsible for Brussels sprouts and witbier.

I wondered how the slider is thrown. Does it damage
the arm the way some of the other pitches do?

That I think comes with experience.

I find it interesting that our Sox are into blowout
mode. Feast or famine is not my favorite situation, but
batting practice can be worthwhile, and 9 is a
pretty darn good streak.

I aimed for a draw. Usually a show of aggression was
good enough, so I almost never actually clocked anyone.
The one time that sticks in my memory involved a nasty
fat bully boy whose daily source of joy was whacking me
with a rubber book strap - you pull the strap taut and
aim the metal hook at someone, and if you do it right,
you can inflict some real pain. He also kicked me in
the balls daily. I was mindful of everyone's advice and
turned the other cheek until, one fateful day, I beat
the crap out of him; whereupon he went squalling to the
teacher, and guess who got sent to the office. But the
upside was that his tortures thenceforth were less
enthusiastic and less frequent, almost pro forma.

HAWAII MANG-O CAKE
cat: tacky, dessert
servings: 10

FOR SPONGE CAKE
8 eggs
1 c sugar
1 c flour, sifted
1/4 c unsalted butter, room temperature
FOR GLAZE
1/4 c passion fruit juice
1/2 mango, diced
FOR COCONUT MOUSSE
1 c coconut puree
3 gelatin sheets, soaked in cold water
- or 1 ( 1/4 oz) pk unflavored gelatin
1 c sugar
1/2 c egg whites
1 c heavy cream
1 vanilla bean
FOR GARNISH
Mango sorbet
Pineapple chips

FOR SPONGE CAKE: Heat oven to 350F. Beat eggs and sugar
until smooth; slowly blend in butter and flour. Pour batter
into a lightly greased half-sheet pan and bake for 20-25 min,
until a toothpick inserted into the center comes out clean.
Remove from pan and cool on a wire rack.

FOR COCONUT MOUSSE: Split vanilla bean and scrape insides
into coconut puree; allow to infuse for 1 hr. Beat egg
whites and sugar to form the stiff, glossy peaks of a
meringue; separately, whip cream to a foamy consistency.
Warm coconut puree in a saucepan over low heat; transfer
to a bowl and add gelatin, then fold in meringue and cream.

ASSEMBLY: Pour mousse over cake and smooth; chill in freezer
to set. When frozen, glaze and cut into 10 slices; top each
with a scoop of mango sorbet and a few pineapple chips.
