I got curious and did some more research and found this:

"The Katse Fish Farm project (the only commercial fish farm in
Lesotho) is currently producing 300 tons of trout per year."

(which works out to about one fish dinner per person per year)

Fish farming plays a very important role in the development of the
fisheries sector in Lesotho. The potential for aquaculture
development has increased as a result of the current and planned
water development projects." (read: dams)

"Fishing was never part of traditional life in this landlocked
country of goat and cattle herders, but the Katse Fish Farm is
opening up new doors."

     Title: Soba Noodle Soup With Spinach And Smoked Trout
Categories: Japanese, Noodles, Soups, Smoked, Trout
  Servings: 4

      6 c  vegetable, chicken, or kombu
           dashi stock
           Soy sauce to taste
      6 oz Japanese soba noodles
      1 TB toasted sesame oil
      6 oz baby spinach
    1/2 lb hot smoked trout fillets,
           skinned and cut into
      4    portions
      1 bn scallions, thinly sliced

In a medium saucepan, bring stock to a simmer. Season with soy sauce
to taste (it should be saltier than you think, since the noodles
will not be seasoned).

In a large pot, bring at least 4 quarts of water to boil. Add the
soba noodles carefully, return to a boil, then add 1 cup of cold
water and bring back to a boil. Repeat 3 times, or until the noodles
are fully cooked. Drain and toss with the sesame oil.

Distribute noodles amongst 4 soup bowls. Add spinach, most of the
scallion, and trout to the stock, turn off heat, and cover. Allow to
sit for 3 minutes, then gently ladle over the noodles. Top with
remaining scallion.
