Over half, wherever I go, and if you count slicing and
dicing, probably 90%. I feel somewhat uncomfortable when
someone else is cooking and I have nothing to do but
watch - even if they cook as well as or better than I.

Funny the hard-defended loyalties. I too prefer Coke,
and not because I like Atlanta (I don't, particularly).
For a less punchy cola, I used to like RC.

I've seen recipes that call for soaking starchy
foods to get rid of the starch - then the remaining
(proteinous?) structure takes well to cooking. Some
then let the starch settle, collect it, and use it
for something else, which strikes me as both
parsimonious and sensible.

Lahori Biryani By Nawazu
cat: Ragistan, Pakistan, main, starch
servings: 6

2 c basmati rice
1 lb meat
3 Loongs (cloves)
2 md onions thinly sliced
1/4 Tb turmeric
6 black peppers
1 ts dried coconut
1 pn saffron
1 Tb ginger thinly sliced
10 almonds thinly sliced
1/2 ts zeera (cumin)
3 garlic cloves
1 c yogurt
red ground chilies and salt to taste

Soak rice in water for 15 min. In a pan put yogurt, garlic,
1/2 onion, ginger, and meat together and let it sit for 1 hr.
After that in a separate pan put some oil and fry the rest of
the onions, when they start to turn brown add almonds,
coconut, and bhunafai. After 3 min or so put the meat mixture
in there and let it cook on slow heat for 10 min. After that
put 1 c water, red chilies, and salt and let it cook on
medium heat till the meat is 3/4 way done. In a separate
pan put some oil and let it get hot, once hot add black
peppers, loong, zeera, tumeric, and saffron and fry 3 min,
then add 3 c water and let it boil. Once the mixture boils
add rice and cook for 10 min, check to see if rice is 3/4
way done if it is then get rid of the excess water. In an
empty pan put 1 Tb oil and then a layer of rice, on top of
which add the meat mixture, lay a second layer of rice with
the remaining rice cove tightly and cook 15 min on slow heat.
