For me, it was also enjoyable to cook the dinner for my daughter's wedding..
The menu was simple (to me at least (g)), consisting of Chicken Parmesean,
Risotto-american (yeah it sounds weird but really good, I'll post that in
another message), and salad with Italian oil-vinegar dressing.. I also made the
wedding cake (THAT was the time consuming job :)).  It was a 3 layer cake, with
tiers and posts, covered with royal icing and fondant.  Believe me, that was a
learning experience, but great fun.

==Chicken Parmesan==
Serves 4 (you can increase the amounts for huge crowd easily) Preheat oven to
350F

4 boneless, skinless chicken breast cutlets 1 egg with 1 Tablespoon water
flour for dredging
1 cup Italian flavored bread crumbs 1/4 cup Locatelli Pecorino cheese for the
bread crumbs 1 Tb. additional cheese for the egg. 2 Tablespoons chopped parsley
for the bread crumbs 1 additional Tb minced parsley for the egg Dash of salt
and pepper
1 clove garlic minced
2 tablespoons butter or olive oil
2 cups marina sauce
4 slices mozzarella cheese
perhaps 1/4 cup parmesean cheese for each breast

Pound the breast pieces lightly between two pieces of plastic wrap. Salt and
pepper the chicken breasts lightly.  Beat the egg and water in a small bowl or
dish.  Add 1 tablespoon each of parsley and cheese to the egg.  Put the
breadcrumbs in another dish. Mix the breadcrumbs with the 1/4 cup cheese, 2 Tb.
parsley, salt and pepper.  Toss a bit to combine.  Dredge the chicken breasts
in the flour, shake off the excess, then dip in the egg, then in the
breadcrumbs. Saute the garlic in the butter or olive oil in a large saute pan,
just until golden. Add the breast pieces one at a time, and brown them quickly.
In a clean 13x9 pan with olive oil on the bottom.  Sprinkle a bit of sauce over
the olive oil.  Place the sauteed chicken pieces in the pan.  Top each with
marinara sauce, then some parmesean cheese, then more Marina, then a slice of
mozarella. Bake in the oven for 20 minutes, or until the chicken is done, and
the cheese is melted.
