I didn't know they even made it any more after Kirin
bought it; looking it up on that repository of all
knowledge, I see that you can get it on line, but
it's bizarrely expensive.

Not all pies are made with short pastry. Anyway, I don't
think that's in the definition, if even there is one.

I'm thinking beef tongue and cheek pie might be quite a
good idea. I imagine the meats might do well to be precooked.

Empanadas. Stuff in puff pastry. Beef and kidney. Even
Swanson turkey. And I'm not much of a starch person.

Question. Given what we know about chicken pies, is a
cottage pie really a taste of home?

Tuiles (shingle cookies)
cat: dessert, French, roofing tile
yield: 36

1 c sugar
4 lg egg whites
2/3 c flour
6 Tb butter, melted
1 c slivered, blanched almonds
1/2 ts vanilla extract (optional)

Oven at 400F. Butter 2 baking sheets (or spread with
parchment and then butter).

Combine sugar and egg whites in mixing bowl and beat
with a wire whisk until foamy (about 2 min). Add
remaining ingredients and mix well.

Drop by small spoonfuls onto buttered baking sheet
and bake 10 - 12 min.

While cookies are warm, place over rolling pin or
glass to give them a curved shape like roof tiles.
Allow to dry in place so they retain their shape.
