MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Masala Dosa
 Categories: Potatoes, Cheese, Breads
      Yield: 8 servings
 
      7 oz Box of Gits Dosai Mix
    1/2 c  Oil + more to grease pan
      1 ts Brown or yellow mustard seed
      5    Fresh curry leaves *
      1 md Yellow onion; diced small
      1 ts Kosher salt
      1 tb Minced ginger
    1/2 ts Turmeric
      4 md Yukon gold potatoes; boiled,
           - peeled, grated
      4 oz Panir cheese, diced small *
           Coconut Chutney; to serve
 
  Prepare the dosa batter according to package directions. The batter
  should be thinner than pancake batter but thick enough to lightly coat
  the pan. Refrigerate until ready to use.
  
  Heat oil over medium-high heat in a saute pan. Add mustard seeds and
  toast until seeds begin to pop, about 2-3 minutes. Turn down heat to
  medium and add curry leaves, onion and salt. Keep stirring and cook
  until onions are soft and begin to caramelize, about 4-5 minutes.
  Halfway through cooking the onions, stir in ginger. Once the onions
  are done, remove the curry leaves and discard. Add turmeric and grated
  potatoes. Mix well. Stir in cheese and mix well again. Remove from
  heat. Keep covered while preparing dosas.
  
  To make the dosas: Lightly grease an 8-inch nonstick pan with oil.
  Pour a heaping 1/4 cup of the batter onto the center of the cold pan
  and spread batter with an offset spatula or a flat bottom ladle in an
  outward circular motion. Place the pan on a stove over medium heat.
  Once the batter begins to set, sprinkle a few drops of oil over the
  crepe. Fry until crisp and golden brown; you will not have to flip
  it. Fill one side of the dosa with about 1/2 cup of the heated
  filling and fold over the unfilled half. Remove from heat. Repeat
  with remaining batter and filling. Serve with coconut chutney.
  
  Makes 8 dosas
  
  Note: Brown mustard seeds are sold at Indian grocery stores such as
  Vik's Retail Shop in Berkeley. Fresh curry leaves are sold in
  specialty grocery stores including Berkeley Bowl in Berkeley. Fresh
  panir is available in the cheese section of Whole Foods and other
  well-stocked supermarkets.
