The passing lanes being on the uphill sections.  Also, in the hills,
there are rarely any long, straight stretches giving a clear view of

Some of our "Rest stops" have chemical toilets, but most only have the
surrounding bushes - something that would be lacking in NWT.  The ones
that are too small for road trains are appropriately marked, lest a
train driver goes into one and can't get out.

The water of the Great Australian Bight are fairly cool (18C or so).
The spat used is raised in Tasmania, and introduced to the oyster
farms at about 8 mm long.  As oysters are filter feeders, purity of
the water is very important.

      Title: Oysters with Wakame Seaweed
 Categories: Appetizers, Fish, Japanese, Australian, Oysters
      Yield: 6 Servings
 
      3 c  Rock salt;
     36    Chinese spoons
     36    Oysters; shucked
    100 g  Wakame seaweed
    200 g  Pickled ginger; drain
           -fine julienned
 
  Put half a cup of rock salt in a neat row in the centres of 6 plates
  [or 6 Chinese spoons per plate.] The rest must be done seconds before
  you serve. Either sit six oysters in the salt, or tip them, with
  their liquor, into the spoons. Divide the seaweed & ginger between
  the oysters & serve.
