 DS> When we lived in Madison, Wisconsin we ate a lot of yellow perch. 

A pretty good fish if you are careful of the bones.

I don't like it as well as perch or whitefish, as it has
that algae taste that catfish and swai have, and I should
have asked for 3 perch and 1 walleye instead of 2 each, but
I guess I was greedy and wanted more food.

I'd like to claim we were at the second game of the playoffs,
but we didn't get tickets and only saw part of the game at
the hotel bar TV. It seemed like a good idea at the time to meet
halfway across the country with hotel and airline certificates
that were expiring, but, you know what, decent seats at the
stadium where I would be able to see anything cost twice full
plane fare, and we were paying what, 10-20% counting discounts
and perks and just could not justify the additional cost, which
would have turned a budget trip into a maxi-splurge one. So I
ended up not seeing any major-league baseball this year (maybe
next season we should take advantage of the Orioles' being a
terrible team and meet at Camden Yards when they're having
clearance on seats, and we can go to Boog Powell's or something).

So we decided to do several things that were long on the agenda,
such as see the Oshkosh air museum (there's no way to afford it
during the EAA festivities, so the off season is the way to go)
and have pork products for a lower outlay than going to Munich.
The Kohler center was a surprisingly entertaining attraction, too.

We never made it to Madison, though. If we had a couple more
days, it and Appleton would have been on the list.

      Title: Wisconsin Cheese Soup
 Categories: Soups/stews, Cheese/eggs
      Yield: 1 servings

      5 tb Butter or margarine                 2 tb Cornstarch
      2 md Carrots, finely chopped             1 qt Chicken broth
      2    Celery ribs, finely chopped         1 qt Milk
      1 md Onion, finely chopped             1/2 ts Paprika
    1/2    Green pepper, seeded and          1/4 ts Cayenne (up to 1/2 t.)
           - chopped                         1/2 ts Dry mustard
      5    Mushrooms, chopped                  1 lb Sharp cheddar cheese, grate
    1/2 c  Cooked ham, finely chopped               Salt
           - optional                               Freshly ground black pepper
    1/2 c  Flour

  In  a  large  heavy kettle, melt butter or margarine; add carrots, celery,
  onion, green pepper, mushrooms and ham (if desired).  Cook over medium heat
  until  vegetables  are  crisp  tender, about 10 minutes, stirring
  occasionally.  Do  not  brown.   Add  flour  and cornstarch; cook, stirring
  constantly, about 3 minutes.  Add broth and cook, stirring, until slightly
  thickened.  Add milk, paprika, cayenne and mustard. Stir in cheese
  gradually, stirring until cheese is melted. To avoid curdling, do not allow
  soup  to  boil after cheese is added. Season to taste with salt and pepper.
  Serve piping hot.  Makes about 2 1/2 quarts soup.
