      Title: Braised Beef Croquettes w/Cornichons & Capers

  1 1/2 c  Minced braised beef
  1 3/4 c  Homemade breadcrumbs
      3 tb To 1/4 c reserved juices
           - from braised beef
      1 lg Egg; beaten
      3 tb Extra virgin olive oil for
           - frying

      9    Cornichons; minced
      1 ts Cornichon brine
      3 ts Capers
      2 ts Minced fresh tarragon
      3 ts Minced chives

  These croquettes capture the slow-cooked essence of braised
  beef and its thick sauce, encapsulating it in a crispy
  bread-crumb crust. The piquant cornichon-caper mixture
  counterbalances the rich meat perfectly. This is an
  excellent use for leftover braised meats of all kinds.
  
  To make the croquettes: In a bowl, combine the minced meat,
  3/4 cup of the breadcrumbs, and 3 tablespoons of the
  reserved sauce. Mix well with your hands and shape into
  patties about 2 inches in diameter and about 1/2-inch thick.
  If it seems too dry, add a little more sauce.
  
  Place the patties on a plate or a sheet of waxed paper or
  foil. Put the beaten egg in a shallow bowl.
  
  Spread the rest of the breadcrumbs on a plate or a sheet of
  waxed paper or foil. Dip a patty gently in the egg, then lay
  it in the breadcrumbs, gently pressing to coat it. Turn and
  repeat. Set the coated patty on the clean plate or sheet of
  waxed paper or foil and repeat until all the patties are
  coated.
  
  Heat the olive oil in a large skillet over medium-high heat.
  
  When it is hot, add the patties. Fry them until golden
  brown, 2 to 3 minutes, then turn and fry the other side
  until golden brown as well, 2 to 3 minutes. Remove to paper
  towels to drain.
  
  For the garnish, mix all the ingredients together.
  
  To serve, arrange the hot croquettes on 2 or 3 plates, and
  sprinkle with the garnish.
  
  Serves 2 to 3.
