An intolerance is easier to deal with than a full blown allergy. It may
be uncomfortable but only on a temporary basis. Younger son of a friend
of ours has been diagnosed with a dairy (also egg & gluten) allergy by
one doctor, no problems according to another. Mom has decided that for
now, she will go with meal planning to go with the first doctor's
diagnosis. The whole family is eating that way so as not to single out
the one kid as "different"--and easier for mom to meal plan.

It does look good. I know tamales are usually made with corn flour (masa
harina) but I'm wondering if a non corn one could be made. I don't want
to give Steve too much corn at a time. Yes, he has eaten tamales but not
since we were in AZ (to the best of my knowledge), before we started
putting together the pieces of information that added up to the
conclusion that corn caused migraines. I know it wouldn't be quite the
same but if a wheat based tamale could be made.........guess I'll have
to experiment with that in my spare time.
