That's because you're in a worse trick-bag than I am ... being further from the
source of the "awesome seafood". And over worse roads (Ice Road Truckers
reality shows notwithstanding).

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Filets of Bluefish a la Gen Patton
 Categories: Seafood, Citrus, Sauces
      Yield: 4 Servings
 
      4    Bluefish filets
      1 pt Chablis wine
      1 c  Shallots; fine chopped
    1/2 c  Parsley; fine chopped
    1/2 pt Heavy cream
      1 tb Lemon juice
      2 lg Egg yolks; beaten
           Salt & white pepper
 
  Place filets in a buttered baking dish, sprinkle with shallots
  and parsley. Pour on the wine, dust with salt and pepper and
  bring to a boil. Cover the dish with oiled, waxed paper (or
  foil) and place in preheated 350øF/175øC oven. Cook for 15
  minutes.
  
  Now drain the juice from the baking dish into a saucepan,
  add the cream, the lemon juice, the beaten egg yolks and
  continue to stir this over the flame until it has reduced
  to thick consistency.
  
  Pour this over the filets, which you have kept hot in a
  baking dish, and serve very hot.
