off 98% of the consumers, save the fish AND drop the price for the

In Canada, Loblaws the largest grocer in the country has dropped
retailing it voluntarily. They have huge signage in their stores
stating what species they no longer carry and why. Plus they suggest
substitutes in their posters. I like that.

 DS> If you're getting orange roughy priced reasonably, you are most likely
 DS> getting TILAPIA instead.

Ocean perch makes a better sub. Almost anything beats tilapia.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Cod in Butter Sauce with Green Beans
 Categories: Cod, Sauces
      Yield: 4 Servings

MMMMM-----------------------FOR THE SAUCE----------------------------
    175 g  Butter; cubed
      2    Shallots; finely chopped
    Salt and freshly ground
    -black pepper
      6 tb White wine vinegar
    125 ml White wine
    125 ml Fish or vegetable stock;

MMMMM------------------------FOR THE FISH-----------------------------
      4    Cod; (6-8oz) fillets
    275 g  whole green beans
      1 ts Fresh parsley; chopped

  To make the sauce, melt 25g (1oz) of the butter and add the shallots,
  salt and pepper.

  Cook for 2 minutes until softened.

  Add the vinegar and wine and reduce by three-quarters.

  Add the stock, and again reduce by three-quarters.

  Bring to simmering point and whisk in the butter, a few pieces at a
  time.

  Check the seasoning and strain through a sieve.

  Meanwhile, steam the fish, covered, over a pan of boiling water for
  6-8 minutes.

  Cook the beans according to pack instructions.

  To serve, place the beans onto each plate, top with the cod fillets
  and pour the butter sauce over the top.

  Sprinkle over the chopped parsley and serve immediately.
