The beef that I had at the Double-T diner had no bone, and was quite
lean.  The short ribs that I see in the stores here seem to be 30% or
more bone and 20% or more fat.  All the more reason why we are
considering chuck steak when it comes on sale.  I'm also considering
what the stores call ox-tail, but that is usually priced high also.  It
does have a decent marrow bone, and fairly lean meat with only 10% fat
or so.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Trenchers (open face)
 Categories: Sandwich, Snack, Tuna, Vegetable
      Yield: 4 servings
 
MMMMM-----------------------TUNA TRENCHERS----------------------------
    2/3 c  Mayo
    1/2 c  Celery, thinnly sliced
     13 oz Water packed tuna, drained
    1/2 c  Shredded cheddar cheese
      2 tb Onion; finely chopped
      1 ts Dill weed (dried)
    1/4 c  Green pepper, finely chopped
           Lettuce or Endive

MMMMM----------------------GARDEN TRENCHERS---------------------------
      1 c  Chopped zucchini
      1 c  Mozzeralla cheese, diced
    1/3 c  Sour cream
      1 tb Onion finely chopped
      1 ts Dried basil crushed
      1 c  Cherry tomatoes, quartered
           Lettuce

MMMMM-----------------------BEEF TRENCHERS----------------------------
    1/2 lb Deli roast beef -
    1/2 c  Chopped onion
    1/2 c  Chopped green pepper
    1/2 c  Chopped tomato

MMMMM---------------------HORSERADISH SAUCE--------------------------
      3 oz Cream cheese, softened
      3 tb Milk
      2 tb Cream style horseradish (or
           To taste)
    1/2 ts Sugar
    1/4 ts Salt
    1/4 ts Black pepper
           Lettuce or Endive

MMMMM-------------------------TRENCHERS------------------------------
      1 cn 8 oz crescent dinner rolls
 
  Trenchers:  Heat oven to 375.  Unroll dough; separate into four
  rectangles.  Press or roll each to form 6 x 4 rectangle.  Place on
  ungreased cookie sheet.  Firmly press perforations to seal.  Prick
  with fork in several places.
  
  Bake at 375 for 8 - 10 minutes or until golden brown.
  
  Tuna Salad
  In medium bowl, combine all salad ingredients; mix well.  Arrange
  lettuce on each "trencher", spoon salad evenly over lettuce.  Serve
  immediately.
  
  Garden Salad
  In medium bowl, combine all ingredients except tomatoes.  Mix well.
  Then gently fold in tomatoes right before serving.  Arrange lettuce
  over each "trencher" spoon salad evely over lettuce.  Serve
  immediately.
  
  Beef Salad
  Tear beef into bite sized pieces.  In medium bowl, combine all salad
  ingredients; toss gently.  In samll bowl, combine all sauce
  ingredients, blend well.  Arrange lettuce over each "trencher" spoon
  salad evenly over lettuce, top with sauce.  Serve immediately
