That's true about most restaurateurs everywhere. What's the
statistic - 60% of new restaurants go under within 3 years.
(Not 90% in the first year, which would imply that cooks
are way stupider than other entrepreneurs.)

Some others of us seldom get hung over despite not staying bent
while tippling to moderate excess. They used to say, oh, you'll be
all right, just hydrate yourself. But since my current situation
in which I am supposed to stay just a little dehydrated, I find
that that's not so - one has to be really, really dehydrated to
have a hangover, at least if one is an intelligent and experienced
user of adult beverages.

THE BEDFORD'S APPLE SLAP SHOT
cat: booze
serbings: 2

1 1/2 oz Bols genever
15 dried cranberries
12 whole cloves
1 star anise
1 cinnamon stick
2 c apple cider
Lemon peel

To make the hot spiced cider, combine all ingredients
except the genever and lemon peel in a sauce pot. Cover
and simmer on low for 15 min. Pour the genever into a
mug, then fill the rest of the mug with the hot spiced
cider. Garnish with a lemon peel.
